Many setup questions

I am trying (unsuccessfully) to set u a new HP Z240 Tower Workstation. I want a diskless workstation which I can use with swappable SSDs. I see this as having the following advantages:

1) Use disk image backups that are easy and safe to test and restore (just swap SSDs). In the past I've had backups that didn't work when I tried to restore them or corrupted my system if I tested them in advance.

2)Protects against hardware failure, viruses, and stupid mistakes or failed experiments.

2) Swap operating systems. Keep systems isolated. In the past I've had Windows 10 corrupt my Windows 7 disks.

3) Keep separate disks for browsing dangerous websites, proprietary data, etc. Be sure one disk can't contaminate another.

and many more.

For all these reasons I really want a system with ONLY swappable drives. B&H technical support (I know that's not binding on HP) assured me I could do this before I bought the machine. I now have the following problems:

1) I can only locate two of the four SATA data connectors.

2) Can't locate and remove internal SSD drive.

   (1-2) could be solved if HP supplied a motherboard diagram or anything approaching real documentation.

3) Can't turn off UEFI secure boot (Tried several different sets of directions all leading to dead ends.)

4) Have not yet tried switching to MBR formats. I don't want to do that before I have a testable backup.
